Ingredients
  

  • 1 box 15.25 oz cake mix, any flavor
  • 2 large eggs room temperature
  • cup vegetable oil or melted butter
  • ½ teaspoon vanilla extract
  • ½ cup mix-ins of choice chocolate chips, sprinkles, nuts – optional
  • ¼ cup granulated sugar for coating – optional
  • ¼ cup powdered sugar for coating – optional
  • ½ cup festive sprinkles for coating – optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  • In a large bowl, whisk together eggs, oil (or melted butter), and vanilla extract until smooth.
  • Stir in the entire box of cake mix until just combined—do not overmix.
  • Gently fold in any chocolate chips, nuts, or sprinkles.
  • Refrigerate dough for 15–30 minutes for thicker, chewier cookies.
  • Scoop 1½-Tbsp dough balls. Roll in sugar, powdered sugar, or sprinkles if desired; place 2 inches apart on prepared sheets.
  • Bake 9–11 minutes, until edges are set but centers still look slightly underdone; rotate pans halfway through.
  • Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to finish cooling.
