Ingredients

  • 1  lb  / 16 oz processed cheese loaf Velveeta, cubed
  • 1  can / 10 oz RO*TEL Diced Tomatoes & Green Chilies undrained
  • ¼  cup milk – optional to thin consistency
  • 1  lb ground beef or beef sausage browned & drained
  • ½  cup sour cream extra creaminess
  • ¼  cup chopped fresh cilantro
  • 1 –2 Tbsp taco seasoning
  • 1  tsp garlic powder
  • ½  tsp ground cumin
  • Diced jalapeños to taste

Instructions

  • Cube & heat – Cut the processed cheese into 1 in / 2.5 cm cubes; place in a medium saucepan over low‑medium heat.
  • Add ROTEL – Tip the undrained can of tomatoes & green chilies into the pan with the cheese.
  • Melt – Stir constantly with a wooden spoon or silicone spatula until the cheese is fully melted and combined (≈ 5–7 min).
  • Adjust thickness – If the dip is too thick, stir in milk 1 Tbsp at a time until creamy.
  • Customise – Fold in the browned, drained ground beef (or other add‑ins) and heat 1–2 min more.
  • Serve hot – Transfer to a warmed bowl, slow cooker on “warm,” or fondue pot. Keep at ≈ 135 °F / 57 °C for safe, silky serving.
