Smoked Sausage Potato Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound smoked sausage beef or turkey, sliced into rounds
  • 1 large onion diced
  • 3 cloves garlic minced
  • 3 medium potatoes peeled and cubed
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1 cup heavy cream
  • 3 cups fresh spinach or kale chopped
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the smoked sausage and cook for 4-5 minutes until browned. Remove the sausage with a slotted spoon and set aside.
  • In the same pot, add the onion, garlic, carrots, and celery. Sauté for 5-6 minutes until softened.
  • Stir in the cubed potatoes, chicken or vegetable broth, thyme, and smoked paprika. Bring the soup to a boil, then reduce the heat to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are tender.
  • Stir in the heavy cream and add the browned sausage back to the pot. Cook for 5 minutes, or until heated through.
  • Add the chopped spinach or kale and cook for an additional 2-3 minutes, or until wilted.
  • Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
