4cupschicken or vegetable broth
1teaspoondried thyme
1/2teaspoonsmoked paprika
1cupheavy cream
3cupsfresh spinach or kalechopped
Salt and pepper to taste
Fresh parsleychopped (for garnish)
Instructions
Heat olive oil in a large pot over medium heat. Add the smoked sausage and cook for 4-5 minutes until browned. Remove the sausage with a slotted spoon and set aside.
Stir in the cubed potatoes, chicken or vegetable broth, thyme, and smoked paprika. Bring the soup to a boil, then reduce the heat to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are tender.
Stir in the heavy cream and add the browned sausage back to the pot. Cook for 5 minutes, or until heated through.
Add the chopped spinach or kale and cook for an additional 2-3 minutes, or until wilted.
Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
